This one-pan Tuscan baked salmon is an easy yet flavorful meal, perfect for busy weeknights. Ready in under 15 minutes, it combines creamy butterbeans, fresh spinach, and juicy tomatoes with tender salmon for a dish that’s both hearty and light.

Ingredients (Serves 2):

  • 2 salmon fillets
  • 1 tin butterbeans
  • 200g cherry tomatoes
  • 8 sun-dried tomatoes, chopped
  • 1 shallot, diced
  • 2 garlic cloves, minced
  • Few handfuls spinach
  • 2 tbsp half-fat crème fraiche
  • ½ tsp smoked paprika
  • 1 chicken stock cube
  • 1 lemon (zested)
  • 15g grated Parmesan
  • Fresh basil (plus extra for garnish)

Method:

  1. Season salmon with salt and pepper. Sear in a hot pan until golden, then set aside.
  2. In the same pan, sauté shallot and garlic. Add cherry tomatoes, sun-dried tomatoes, paprika, and basil stems. Cook for 2 minutes.
  3. Dissolve the stock cube in 200ml water, pour into the pan, and simmer. Add butterbeans and cook for 5 minutes.
  4. Reduce heat, stir in crème fraiche, lemon zest, Parmesan, and black pepper. Fold in spinach and chopped basil.
  5. Return salmon to the pan, letting it warm through until cooked.
  6. Garnish with extra basil and Parmesan before serving.
