Easy Salmon Rice Bowl with Sriracha Mayo and Avocado

Over the years, I’ve found that the best meals are often the simplest. This Asian-inspired lazy salmon rice is a perfect example—packed with flavor and ready in no time. It’s a great dinner or lunch idea for busy days when you want something healthy and delicious without spending hours in the kitchen.

Start by rinsing 1 cup of medium-grain white rice until the water runs clear. Add it to your rice cooker with the appropriate amount of water. Place a 6 oz. salmon fillet directly on top of the rice, then cook using your preferred setting (I use the quick cook function on my Zojirushi).

Once done, fluff the rice and gently break the salmon into pieces. Stir in 2 chopped green onions, 3 tbsp furikake, 2 tbsp sriracha, and 2 tbsp Kewpie mayo. For extra richness, add a splash of soy sauce.

Serve the salmon rice with a side of seaweed sheets, sliced Persian cucumbers, avocado, and kimchi. The combination of textures and flavors makes this dish a satisfying meal, whether you’re looking for a quick dinner or a simple lunch.
